I love the weight and balance, especially the Saucier.

8-1/2ā€ is really small for a fry pan.

We have a bunch of all-clad for decades now. What sees the most use? Cast iron.

I’m hoping the it works well for eggs/omelets, (skeptical) but I’m sick of replacing non-stick.

Should also work as a proof of concept.

When cooking for one, I often use a skillet that size.

I often use a smaller skillet when cooking for two. A thick-cut steak or pork chop for two isn’t all that big, and I’d much rather have a smaller thicker piece of protein than a thinner larger one.

Nice score. I love my Demeyere, though none of it is Atlantis.

For this application and 2 duck breasts or small dinner for two scallops, it is ideal.
You can put just a small spray of Pam or use butter if you prefer. It basically cleans up with water. You can flip the omelette with your wrist. No spatula needed.
It is AMAZING. Much better than any non-stick, All-Clad etc I have ever used.

I rescind my recommendation for scanpan. I clearly got baited. They are not a single layer of metal, there is a coating of some sort that is now starting to peel – and I don’t think we got them more than ~4 YR ago. I would NOT recommend scanpan due whatever chemical concoction they have added that causes a peeling effect.
