Today at Pike Place Market I found fresh ramps, gorgeous morels, and fresh fava beans. A total trifecta of spring heaven.
Dinner was roasted chicken with just S&P, EVOO and fresh thyme. Deglazed with some chicken stock from the other day that was aromatic with a hint of star anise. Sauteed the morels down in the deglazed pan for a loose but wonderful bit of chicken and morel gravy, almost creamy with the morel goodness as the mushrooms release their own magic. Meanwhile I chopped and sauteed all of the ramp bulbs, the oil turning bright green as they sweated down, then tossed in some farro that I had boiled for 45 minutes. A nice dose of fleur de sel and EVOO and then stirred in the fresh fava beans that I had shucked, parboiled and shelled (always an insane amount of work and compost and always worth with). Finally I sauteed the ramp greens separately and finished with a little salt ant EVOO.
Washed it down with a 1990 Beaucastel. The chicken was the perfect foil to the magic of the morels, ramps and favas. The ramps were the star since it is such a uniquely pungent item, but every bite was heaven. Probably the best dinner I will have all spring, all carried on the back o just perfect ingredients.
That sounds absolutely delightful, Eric! I can’t wait for the farmers markets here to start carrying some local freshness. Ramps are just starting to appear here.

As always, so stellar. This was a more mature and lighter bottle but screaming with garrigue, ripe and roasted, just textbook CDP. It always brings a smile to my face.
Eric- After moving back to Denver from southeastern PA, I always get a bit wistful this time of year as I used to be able to pop out the back door and have an abundant supply of ramps and a short drive let to a much treasure morel hunting ground. SIGH. then again, I didn’t get 30+ days on the slopes in PA.
