Spring Mountain Sale of Elivette wines

I had a bottle of 2013 this week. Decanted 3 hours on night 1, still very tannic, oak-forward and closed off. It came alive on night two, significant improvement. IMO these still just need a ton of time and/or air.

Agreed on the '06. Had one last night and it was singing! Plenty of fruit still with tertiary notes coming through. Hard to imagine it getting any better than right now.

Opened a 2000 tonight with a NY Strip. It was delicious on pop and pour. Just slightly subdued compared to other vintages, but integrated and lively enough. Within a couple hours of opening the bottle (kept corked), it was still tasty but noticeably more muted and trending towards prune-y, if not there yet. Probably slightly past its prime, so I would drink these sooner than later.

I’ve been loving the '00. I had a 375 last night with homemade Bolognese. It was absolutely signing and my favorite bottle I’ve tried. The cork wasn’t very tight and also quite brittle, but the bottle was perfect.

2006 was epic this past weekend.

Maybe it’s just me but I’ve found every vintage I’ve tried to be pretty coy on fruit.

Looks like they took off the listings of most Elivette on the SMV website. I did enjoy referencing them, so this is disappointing.
