I don’t know if they are still good, but a long time ago we had a lovely stay / dinner at the Pitcher Inn. Although to be fair, not truly in Southern Vermont.
Drank the better part of a bottle of St Joe off their list, since my wife only wanted one glass of it. (She has always been limited in her syrah enthusiasm)

There ought to be many good places in Manchester, Ludlow, Killington environs given the ski visitors.
Probably worth a look. I haven’t been in years, but the dining room and views are fantastic.
Feels like Mt Snow has gotten added more high end accomodations than Okemo/Killington if that is what you are looking for. Have not been outside of ski season. I’d probably be in Hudson or Great Barrington personally but I know that wasn’t the question
not sure how far you want to go and i havent been in a decade but these come to mind:
I stayed at Farm Road Estate in West Dover a couple of weeks ago. Not luxe but very pleasant. The restaurant there is a fairly upscale farm to table affair.
This is generally where I stay. Agree with your statements. Hermitage Inn 5-10 min drive is more upscale and has a nice restaurant as well (but has been hit/,iss for me given the cost). Believe they have a pretty big wine program and do regular wine dinners there but i’ve never been
