So what do you recommend and why?

I dig the Crock Pot deal they run at Costco … works great for cheap.

I use my Staub enamel cast-iron pot, for one-utensil slow cooking. The first step is oven-roasting ingredients around 375F, until evenly and well browned. After adding some braising liquid, I cover the pot, and cook around 185F overnight.

NB: piercing smoke alarm can double as a morning wake-up call.
