I can see where it would be rough holding that with a pectoral fin.

The issue really is that stupid spur at the tail. It is flat out uncomfortable.
Fin or finger.
Though I do hear Delta is giving them away to all Jews bound for Riyadh.

If you’re holding the knife properly the spur shouldn’t be an issue unless your hands are the size of catcher’s mitts.

Agreed re: the images and the techniques. I diced 2 onions, a carrot and some bread on a cutting board at SLT. I do tend to hold my knife like that and still that nub comes into play. Oddly.

How do you guys sharpen your Shun knives? Do you send them back to Shun for sharpening, hire someone locally, or do it yourself. I sent mine back in last year and have been pleased with the results and fairly quick turnaround, but I’m not sure I want to mess with that each time.

Re: sharpening Shun a local knife guy says that the angle isn’t that important when resharpening…but I am ignorant…

I now have the seven inch santoku in my possession. Will report back.

Amazing knife. Fit and finish is worthy of the original price, and makes you not want to actually use it. Perfectly balanced and the blade geometry with the handle is way better than either the Classic or Kaji line. If I had the coin, I would go back and get all of them.

Looking for an 8" chef knife, you are not making this easy as I seriously like the Kramer knife, but a $100 difference can make me jump on one of these.
