We are making our way from Galicia to Basque Country, taking a more southern route this time, to hit a few bucket list places far from just about everything. One of them is El Ermitaño, known for its lechazo (milk fed lamb) conservas and other products, and for its extensive sherry list.
The Sherry Bar list by the glass is a monster. We started in the bar area with a Fino from Tradicion, along with some excellent anvhovies and housemade cecina.
During the meal, we asked for a suggestion to accompany the sweatbreads, and we presented with this fantastic amontillado from a producer neither of us knew.
Curiously, and kind of wonderfully, before serving us the amontillado, the sherry somm came around and surreptitiously spritzed the air with what turned out to be “Eau d’Amontillado” or sherry perfume It was hilarious, and quite heady. I might dab it behind my ears…
The lechazo was fantastic as well. I would highly recommend a visit here if you are witin driving distance.
