Last night Traci asked me to make dinner so I made a fairly healthy dish of Salmon with a little bit of homemade tarragon butter (tarragon, chives, lemon juice and dijon mustard and butter of course) and put that over a fairly light “Spring” risotto (arborio rice, tomato paste, morels, edamame and leeks). We also added some asparagus but both felt the dish was better off without the asparagus.
Accompanied by a 2007 Breggo Cellars “Donnelly Creek Vineyard” Pinot Noir, Anderson Valley. Wine was a little tight with nice acidity, minerality, dark fruit a little earth and a little beet root. Lighter than we expected for an 07 but I suspect given the acidity this will put on some weight with additional time in the bottle. A very nice match for the dish and a very nice wine.
