Salmon Tacos

Found Dry-Rubbed Salmon Tacos with Tomatillo-Avocado Slaw Recipe - Jeff Smith this while browsing Food and Wine looking for ideas for dinner. My girlfriend and I both agreed that it was the best fish taco we have ever had, and I would say by a good margin. The rub on the salmon is a really nice touch and the slaw is amazing.

First the slaw. This is red and green cabbage, but the sauce is made by blending jalapeno, avocado, cilantro, garlic and tomatillos with a bit of sour cream. I also added some salt and lime juice to taste. FWIW, I added an extra Jalapeno and even then this only had a very mild kick. Next time I may add a 3rd or 4th.

The rub on the Alaskan Sockeye was chili powder, cumin, coffee and brown sugar.

Finally, I served this with some white corn, red onion, black beans and grape tomatoes tossed with S&P and a bit of lime juice. Perfect compliment.

SOLD! I’m making these asap. To boot, I just scored a tub of fresh tomatillo & avocado salsa from Costco. Ill doctor that to taste and hopefully save some time/work.

Definitely delicious. I would point out for simplicity sake the sauce is pureed guacamole with some sour cream added. Many ways to iterate the slaw there.

I made this last night and it was a big hit. I used a bit more coffee than the recipe called for-a good two teaspoons with no ill affects, and I added hot sauce, lime juice, salt and pepper to the pureed slaw dressing. I served the salmon directly on top of the slaw with no tortilla. The rub is fantastic and I intend to try it next on skinless chicken thighs with the left over slaw from last night. Weird thing about my town of Columbus, OH-we have a slew of taco trucks all over and yet finding the tortillas that the trucks use for soft tacos is nearly impossible. We have a slew of bodegas too and they stock and sell the larger, thicker, tortillas but not the smaller ones used by the tacquerias and trucks for tacos. So, I kept it simple and went without the tortillas.

Either Cuco’s or any of the locations of la Michoacana used to sell a pretty decent corn tortilla made over on the west side. I don’t remember the brand.
