Tengumai Yamahai Junmai “Dance of the Demon”. Bright and rich, nutty and saline. The full flavor apparently comes from being brewed in the Yamahai method “in which the yeast starter is made in a special way that allows more funky yeast and bacteria to be pesent, often lending the sake a gamier, wilder flavor that can be fascinating.”
Much more like Sherry than Sake I’ve had to date, though highly enjoyable in a different way.
