I have been in Spain last week end, travelling for leisure with good wine friends, and had the opportunity to taste Roulot aligoté sans soufre.
Very nice, refreshing, and easy drinking wine and a perfect match with the food served. A vin de soif.
Roulot is experimenting to lower the sulfites in his wines, and in 2018 made a completely so2 free aligoté.
It’s remarkable for a producer of his status, trying to improve and still being open to new ideas, and wine making approach.
Fortunately the aligoté didn’t hit the market, or we would see stupid prices on such a simple, still remarkable wine.
