Does anyone have any good recipes that include roasted beets? I am really craving roasted beets. I prefer a savory recipe to a sweet one.

While baby vegetables would be ideal, I don’t see any reason you couldn’t use “adults”, cut into smaller pieces before roasting.

That is similar to what I do although I never bother with par boiling. I just throw everything into a smokin hot pan and into the oven. I do roast longer but also have whole garlic cloves and whatever else is lying around.
After roasting, I think the main difference with using the babies would be aesthetic.
I scrub them but don’t peel them, wrap them in foil, roast them for about 60-90 minutes in a 350 oven (until you can pierce them easily with a knife). Take them out, peel them (which is easy to do once they’re roasted), cut them into smaller pieces, and add sherry vinegar, olive oil and grated fresh ginger. Toss them and let them sit for 20 minutes. Simple and really good warm or cold.
We like 'em in a salad with butter lettuce, goat cheese, citrus segments and a citrus (Meyer lemon’s good) vinaigrette. Maybe some candied pecans or walnuts, too.
Similar to some of the other suggestions, I like to roast them and incorporate them into a salad along with arugula, burrata cheese, toasted/crushed walnuts, fresh squeezed lemon and good quality extra virgin olive oil.
