Red Onions in a red wine reduction

This was served at Wine and food road event in Sonoma in Nov…

I Digress to my recipe:

1 Red Onion Sliced
1 T Thyme
2 Bay Leaf
1 T sugar
1/2 Bottle of left over wine… Cab
1 T Balsamic Vinegar
all sorts of pepper… I used Malbar and Red Pepper flake

Serving On Surf and Turf:

Scallops and Seasoned Prime strips

Did a similar one for Christmas Eve dinner, reduced a cup of port and cabernet by half. Cooked down a few red onions thinly sliced, then added the reduced wine and beef stock with some flour and rosemary. Was a perfect pairing.

I’ve been making something similar for years. Good on pork chops, sliced pork loin, steak sandwich sliders, and steak soft tacos. Also good with goat cheese or cream cheese on crackers, bread rounds or bagels.
