If you like product-driven restaurants, Bar FM in Granada is a no brainer. Good wine list, too.
We very much liked Restaurante Rafa It is a 15 minute walk to Josalito Jamonaria

Ispal in Sevilla - Had an extremely affordable tasting menu in an intimate setting, and while I didn’t go with their pairing I had several very interesting wines with the meal including a phenomenal sparkler made from 100% Palomino.
In Madrid, we had an extremely high quality experience at Saddle. It’s a 1-star place that would like to become a two. Kind of a high end steakhouse aesthetic, but vibe was relaxed and fun. The wine list is actually what attracted me in the first place, but we received excellent service, food was excellent, decidedly French in the execution and flavors, and they turned an à la carte into a 6-7 course meal. Really connected with their brilliant somm after a bottle of Bouchard Creux d’Enfer and got a tour of the cellar along with a personal list of his favorite places to shop and drink. Highly recommend Saddle for an upscale meal.
