I’m trying to make a mock carbonara tonight using Zucchini in place of the noodles so I won’t have pasta water to add to the dish The sauce won’t work without some type of binder liquid. Am I sunk or does anyone out there have a suggestion for an alternative liquid?
Boil a small potato to get a starchy water. Use the salted potato water

Zero-waste, wash rice, take the water you used. Now you have starchy water, and washed rice to steam/boil.
I’m not eating grains right now so I wouldn’t cook rice. Turns out I really didn’t need the water. The Zucchini isn’t porous so there was no moisture loss in the sauce. The little I did add left it too wet. Flavor was good but the consistency was off.
