Recipe: Angel Hair Pasta With Langoustines and Oven Roasted Tomato Sauce

1 lb Cherub Tomatoes
Herb Infused Olive Oil
5 Cloves Garlic Confit
White Wine
S&P As Needed
Capers
Rec Chile Flakes
3/4 lb Langoustines (pre-cooked)
Angel Hair Pasta

  1. Toss tomatoes in olive oil and roast in a 425 deg F oven until the skins have some char on them.
  2. Place tomatoes and remaining ingredients for sauce in a saute pan over medium heat and reduce to desired thickness.
  3. Cook pasta accordingly.
  4. Add langoustines to sauce to warm through.
  5. Add sauce to drained pasta.

I used the pre-cooked, peeled and deveined langoustines that Costco is now carrying frozen. Good blend of shrimp and lobster flavours for relatively cheap.

Wine was NV Henriot BdB, which paired nicely.

I saw those at Costco recently…the package was frozen and was much larger. How did you separate them without defrosting?

New phone and I am still working on how to get pics.

All you do is break them off from the big mass…not difficult at all, and then just pop in cold water to thaw.

Wasn’t familiar with ‘Cherub’ tomatoes.
