3/4 lb Langoustines (pre-cooked)
Angel Hair Pasta
- Toss tomatoes in olive oil and roast in a 425 deg F oven until the skins have some char on them.
- Place tomatoes and remaining ingredients for sauce in a saute pan over medium heat and reduce to desired thickness.
- Cook pasta accordingly.
- Add langoustines to sauce to warm through.
- Add sauce to drained pasta.
I used the pre-cooked, peeled and deveined langoustines that Costco is now carrying frozen. Good blend of shrimp and lobster flavours for relatively cheap.
Wine was NV Henriot BdB, which paired nicely.
