Had dinner last night at Fulgrances, Chef Nick Tamburo, former #2 at Ko is cooking there. Stunning meal! I hear he is working on a new project with former Ko Wine Director Nikita. His food is perfect for some Oregon chard!

Shelby is one of the true grower-producers in the WV. Farming her site, and knowing what should be intentional for sparkling. And what is about to come online out of clay… that Meunier in clay… You freaking know it y’all.
