As you maybe know we are host of the EURO 2024 from mid-June to mid-July. So time for one of the favorite dishes of our National Soccer Team created by the team cook Anton Schmaus. A decorated cook/owner of several restaurants in Bavaria.
Sucuk is a spicy Turkish beef/lamb sausage with heavy cumin flavor. Quite a tasty variation to the classic Salsiccia.
Ingredients
250g Sucuk (turkish sausage)
250g Rigatoni/Penne/Gnocchi
800g canned tomatoes
1 onion, chopped
2 cloves garlic, chopped
1 tsp cumin, grounded
1/2 Peperoncino, chopped (or chili)
olive oil
parsley
Preparation
- Cook chopped onion/garlic/peperoncino with olive oil in a big sauteuse or wok until soft. Reduce heat and add cumin and combine for 1min
- Now add canned tomatoes and combine. Cook on high heat for 5min, then reduce the heat and let it cook with lid for 30-60min on low heat
- Meanwhile cook the pasta. Remove the skin from the Sucuk and chopp the sausage in little cubes. Cook in a pan with a little of oil until crisp
- When the tomato sauce is ready add the Sucuk cubes to the sauce. Also add chopped fresh flat parsley and combine. Let it cook for 5min
- When the pasta is cooked, sieve it and add to the Sucuk-tomato sauce. Combine and cook for 2-3-4min. Ready to serve with additional chopped parsley on top.
