I’m smoking a duck for dinner and can’t decide what would be a good pairing. Any thoughts? Nothing that would take a six hour decant. Dinner in 4 hours. Thanks.
I’d go with a CdR. You could probably do a Gewurztraminer if you want to go white – but it’s too damned cold outside to want to be drinking white.
What kind of wood?
Pinot and Barbaresco are pretty good friends with duck. And you do know that food and wine pairing is “vastly overrated”?
Just had some tea smoked duck w/ a beer an that was rather tasty!
Riesling with smoked duck. Sec and Demi Sec Loire Chenin works well, too. But Riesling is my favorite wine with smoked fowl and smoked fish.
Coincidentally I had a smoked duck yesterday. It paired well with riesling but better with Burgundy.

I was thinking Cab franc, so what did you do?
We had a Mordoree CDR. I decided that I wanted to drink it and did not worry too much about the pairing. After 4+ hours in the smoker, the duck was just fine with the wine.
