Pairing idea for 2015 Rieussec

I came back from a trip to Whole foods for Salmon and cereal with two impulse “on sale”purchases - Medjool dates and Black Label Cambazola cheese. While putting the fish into the refrigerator, I spied a lonely half bottle of 2015 Rieussec in there. . .
2015 Rieussec paired with homemade date nut bread and Black Label Cambazola !?
Talk me out of it if I’m wrong.

you are not wrong! make sure the cheese is close to room temp and the sauternes is lightly chilled.

…I’ve always recommended cambozola for a versatile and delicious blue to go with many things.
