For those that have been, what did you do as far as wine? Two pairing options (standard $155; reserve $285) as well as off-the-list or $50 corkage (2 max)

Am leaning towards a vintage champagne and lighter red, such as pinot. Although with your VCC comment, I’m wondering if I shouldn’t consider something more full bodied for the red
Have eaten many times. It is a very white focused menu but there is usually a waygu or something but I wouldn’t bring a whole bottle to cover that. I Usually get something off the pairing menu. They will start you off at the bar with a cocktail(ish). While the original som Aaron has left. He started a really great, reasonably priced wine program and it has continued. The list is good.
Am planning on going in December and based on this thread, I am leaning towards something like Raveneau chablis or may be a good time to pop a 2012 Marcassin chard. Like your idea of getting BTG or perhaps a half bottle of red for the heavier courses, but having the wine focus be mostly white
IMO higher acid whites with little or no oak would be a better match. Obviously Champange is always a good idea there also as can be Sake depending on how much Asian influence is in the current menu but I would probably do Sake BTG. Chablis and Waygu is a really good pairing also.
