Went to a local bar & grill, Dunlay’s, to enjoy the patio while it lasts. They happen to be a sister restaurant of a good local BBQ joint, Smoke Daddy, so I order the pulled pork sandwich, which comes with a choice of sides. I noticed a new option, a potato cake.
They take mashed potato, bacon, scallions and black beans, mold it around some mozzarella into about a 1.5" high x 3.5 " wide disk, coat them with panko and fry to a perfectly deep rich golden brown— and they give you two of these as a side.
