I will say that when I went last fall, I joked with one of the somms about how nuts the pricing on Screaming Eagle SB is… and they brought me a glass.
That pairing is uninteresting and sends the message to me that if the chef believes his cooking pairs best/well with those wines, I’m likely not interested in eating there. Who wants a tasting menu of dishes that pair well with ponderous, low acid cocktail wines like Screagle Sauv Blanc, Sine Qua Non anything, and two stickies?
