Last night we had another pass at Bay Scallops, Shrimp, & Calamari Rings in Rao’s Vodks Sauce on Rustchella di Abruzzo Penne Rigate. The seafood was sautéed in Meyer Lemon Olive Oil and seasoned with SI Salad Herbs, tarragon, & chervil. When the seafood was nearly done, a half jar of Rao’s Vodka Sauce was added, and when the pasta was done, it was plated and served. It was enjoyable with a 2001 Daniel Dampt 1er Cru Chablis 'Le Lys" - fill within a half inch of the capsule; cork saturated an uneven half inch; rich nose and flavors of bright white fruits; mid-palate of good acidity and bright fruit; with a long spicy fruit finish. We ate inside at our dining table because of stiff breezes outside. Music was cello or viola, clarinet, & piano trios by Brahms, Beethoven, and Mozart.
