Ratana is my favorite. Trippa is epic but reservations can be tough. A bit out of the way, but Trattoria del Nuovo Macello is about as traditional/old school as it gets and delicious.

I write about a couple of fancy seafood places in another thread, but if you want a very inexpensive locals place, Dongio for Calabrian food, especially pasta. Nothing fancy, very simple and home made pasta. Shockingly inexpensive.
Simple wine list though.
