Any thoughts on a quintessential cookbook on authentic Mexican cuisine. Even if it is for just one region. Growing up in SoCal I have never felt the need for a Mexican cookbook although I do own a couple of Bayless’s books.
Diana Kennedy’s The Art of Mexican Cooking is a thorough general book with meticulous recipes (a lot like Childs’ first books for French food). Lots of explanations about techniques and ingredients like the differences between types of chilies and their names (sometimes differs for the fresh vs. dried versions).
If you can find the --Aug/Sept 2012 Saveur Mag " The Mexican Issue" well worth the find!! My relatives are Hispanic and many good recipes in here… with similarities to authentic.
I am blessed with a collection of over 80 Mexican cookbooks, many given to me over the years by visiting relatives from Mexico who know how much I love cooking Mexican food. If you are able to read Spanish, a whole world opens up. Bayless and Kennedy do a great job, but they have barely scratched the surface of the magnificent variations of Mexican regional cuisine.
(It turns out that a few of my favorite cookbooks in Spanish have become collectors’ items and are not easily available. I just Googled one - a dealer is selling a used copy for $1183! Yikes!)

Diana Kennedy must be authentic but even with good Mexican groceries nearby – there are nearly always either unavailable ingredients, or processes that are too long or too daunting for me.
