I was going to have a large dinner party but now lots of people can’t make it and it’ll be 4 omnivores and one vegetarian (my wife )
So, I have a turkey in the fridge defrosting, but I’m considering doing something else. Any other interesting protein ideas? My uncle is a big eater and likes quantity. Last year I already did goose. I can do a prime rib roast, but looking for more uncommon ideas. Small leg of lamb? or some interesting to do with the turkey? Like break it down and sous vide the breast and legs. Seasonal seafood ideas welcome as well. I’m considering serving sashimi as an appetizer…again my uncle loves that stuff in quantity…
Meanwhile, I’ll have to think of what veg main to feed my wife which can also serve as a veggie side.
Don’t trash the bird. Over Thanksgiving weekend, I broke a turkey down and did two ways…breast/wing on the Weber, breast/wing on the smoker and the two legs on the smoker for the kids.
I’ve got a recipe I made based on some Cooks’ Illustrated and Sunset recipes. You roast the breast with thin slices of pancetta to keep it moist and braise the legs, thighs, and wings in turkey stock you can pull together quickly. It uses lots of herbs and makes a rich juice to serve along with it.
Hm I think the low temp cooking of turkey may be the common thread here. I think I’ll do that and use one of the glazes or sauce recipes from CI to keep it simple.
