At dinner last night we ordered a roasted half pig head bone and all and we barely put a dent into it (eyes bigger than stomach) and now I have it sitting in my fridge.
Any ideas on what to do with it? I’m contemplating boiling it in a soup and making a base for noodles but I’m not so sure how it’d turn out considering it was already roasted.
I tried the boiling once and just remember the head is super fat with tons of oil. Wasn’t worth the effort imo. Pull the meat off and eat it! Feed eyeballs to Kodiak

The soup route should work fine. As someone said, that it is already roasted adds flavor.
A lot of times when we have such scraps we’ll make the broth then strain off the scrap and mirepoix. Pull some of the good chunks of meat off and reserve. If it is really fatty you can separate some off. Chill it in the pan and you can pull of what rises to the top.
Get some similar meat to augment your final soup. Pho is a good idea, and pork also makes a nice white bean soup.
If you have a decent amount of meat, you could try lechon paksiw.
Never had to deal with a pig’s head but it got me thinking about Chinese bbq stalls that serve duck rice, chicken rice, bbq pork, etc. Maybe stew the thing in some water or a little broth with some soy sauce until the meat starts falling off the bone. Remove the skin and put it under a broiler until it crisps up. Separate most of the fat out of the broth and reduce further in the pot. While that’s going on, shred the meat. Then just serve it all over rice with some chili sauce and dark soy sauce on the side with and some simple veggies.
Broke apart the pig head, sliced off the fat, sectioned off the cheek meat. Put some fat and skin in with the bones and letting it boil. Also added caramelized maui onions, fresh garlic and ginger into the broth. Will let it simmer for 6 hours and will report back .
