Lawer Verjus from Syrah

This is new to me. “Verjus” means the juice from “green” or unripe grapes. Apparently, lemons were scarce or unknow in the middle ages so this “wine” was used to add some citric flavoring and acidity. One of my newsletters announced its availability locally (375 ml). Created by Cary Gott, winemaker at Lawer Estates. The article suggests mixing it with sparkling water for a “no” alcohol beveraqe.
