Yesterday evening we enjoyed a lamb stew, made with tomatoes, onions, garlic, a couple green chiles, and a little rosemary. It was very god with a 1998 Dobra Zemlja Syrah - cork saturated about a half inch and crumbling as I extracted it; rich dark berry fruit, a little acidity, with a long berry fruit finish.
Then for dessert, we had truffled popcorn with a 1978 Ridge York Creek Cabernet Sauvignon - good currant - cherry fruit, fully resolved tannins, barely adequate acidity, with a medium long fruity finish. We’ll have to have old cabs and popcorn more often. It was quite enjoyable.
Did you use any particular piece of lamb for stewing? I am just curious. I usually use a bone in roast and later debone and chop before readding.
It was the leftover section of the leg of lamb that we froze after having it a couple weeks ago. It was diced and placed in the broth for another lamb stew we’d had a few weeks ago and frozen.
