Harbison is super gooey, not sure if it’s their gooiest though.

I bet you’d love Eligo—a Tallegio-style blended cow and goat milk cheese.

But the ultimate cheese for you is currently out of stock—Winnimere. It is our only soft ripened raw milk cheese that gets washed four or five times during affinage. Stinky, hammy, and custardy. Totally delicious.

I’m a huge fan of Jasper Hill Farm cheeses. Harbison and Alpha Tolman are favs.

My quick JHF story…we spend a ton of time in VT skiing. For years, almost all of the boutique VT beers were only available in Vermont and we would always stop at The Alchemist on our way back from skiing Stowe to grab some Heady Topper and whatever other goodies were available. One time, they had a “special” wheel of Harbison available for sale. It was washed with Heady Topper. I was so excited to try it. We were planning on skiing at Sugarbush for the rest of our time in VT so I grabbed two wheels because I wouldn’t be back in the area for the rest of our trip. Drove around with those wheels of cheese in the car for the rest of the trip and it stunk up the whole car. My kids were dying. My solution was to buy some tupperware to put the cheese in to mitigate the smell. It took two pieces of tupperware to make it tolerable.

I don’t remember the exact timeframe, but we drove with those wheels of cheese in the car (freezing in VT so no worries of refrigeration issues) for a couple of days. My kids cursing me the entire time. After a few more days of skiing we drove home. I went to my local Whole Foods that night to do a little shopping. When I stopped by the cheese section, I was talking to the cheesemonger about my unique find up in VT. He said, we have Harbison. And I said, I know, but it wasn’t washed in Heady Topper. To which he responded, sure it was, check out the wheels in the cheese case. And sure enough…they were the exact same. LOL.
