Sorry if this is a dumb question- how long can these cheeses last in the fridge before opening? And then how long after opening? Usually when we buy nice cheese it gets consumed within a day or two so I dont have experience here

Not a dumb question at all.

Every cheese will have a best-by date on it, we give a minimum of two weeks when we send direct. Many will have more time on them than that.

Hand-cut (paper-wrapped pieces like Bayley Hazen Blue) should always be eaten with a little more urgency. Once we cut through the rind, the paste will have the desire to “re-rind.” In other words, those pieces are the most likely to develop surface flora. In most cases, you can cut off a re-rinding or oxidized surface and the cheese will be a-ok.

The last thing I’ll say is that our “best-by” dates are suggestions. That is the date when 80-90% of people will enjoy that cheese. That said, many people age certain cheeses past the best-by date for certain qualities. Many folks will hold Harbison 5-7 days past the date to get the inner texture to be super soupy. All a matter of preference.
