OMG Astrid, I had my bottles on my desk and spoons and sampled them side by side!! THe PX is so earthy and subtle and has sweetness along with the tangy and the Moscatel!! It is probably my new favoriteā¦

Planning way ahead, but thoughts on good wine pairings for the Tuna and the Tuna Belly?
Iāve had both the tuna and the ventresca with my Veleta Rose and Vijiriega and Iāve also had it with nice verdejos and albariƱos⦠the key is that it is packed in oil and although relatively light, the acidity of the afore mentioned types of wines will likely pair very well.
However, last night I had a delicious Salad with a tin of ventresca mixed in and I paired it with Champagne and it was exquisite!

Regarding my current and harvest of my Extra Virgin Olive Oilā¦. It is a beautiful Olive Oil and it is not in unlimited supply. I am also looking at a limited amount available from the 2024 harvest. I have this posted on my website, Gourmets of Spain Olive Oil but Olive Oil production has been hit hard by two climatological factors. It is important to understand the current situation with Olive Oil.
