If you have a fig tree, or access to one: fig leaf simple syrup is amazing

just steep fresh, stemmed fig leaves in water, drain & strain, add sugar to your liking. Super interesting twist on an Old Fashioned (I imagine it would work well with a number of drinks, actually).

Couple of fig trees in my mil’s yeard, will give it a try in a few weeks. Do the leaves have to be dried first?

I haven’t tried rosemary yet, but I love sage infusion.

Does “stemmed” mean with or without stems?

Probably meant destemmed, as they can impart bitterness.

Lately I’ve been making rosemary syrup in a similar fashion.

FYI, I do 1.5c water + 1.5c sugar for my simple. It makes just a touch more than fits in a pint Mason jar.

Interesting. I’ll try this next year. All the leaves have already fallen this year.

yes, I meant destemmed. I did not dry the leaves first, just fresh and torn up to fit in the pot.
