How long will these keep?

Well, I prepped 16 Molten Chocolate Cakes this morning and they are sitting in the fridge.
In the past hour we had two families cancel due to illness. Now there will be only 4 adults and two children. My question is how long do you think I can keep these chilled before they will not cook properly? I have a family get-together on Sunday but that’s 4 days out. The recipe says I can keep it overnight. Not very encouraging.



Ouch. My heat goes out to you, but I’m afraid you are looking at the breakfast of champions right there.

Was wondering, Can you freeze cake batter? (Southern Living) I’ve never tried.

I have seen recipes where you can freeze this. Place in the ramekin and cover with plastic wrap or put the batter in a zip lock bag.

That “it may separate and need to be stirred before using” part kinda tells me I’m sunk. I’ll probably just bake the remaining ones tomorrow and keep them in the fridge til Sunday. We can reheat them then. Worst case scenario they stay in the ramekins with a scoop of vanilla ice cream on top.

Look, I am sure you could get something that tates good out of it on Sunday. I just don’t think it would be better than baking them and saving them.

I don’t see why this wouldn’t work for the short period you need. Do as Chris said and cover the ramekins tightly with plastic wrap or if using the plastic bag push all or most of the air out of it. Thaw overnight in fridge.

At least do it to one so we can find out what happens :smiley:.

Maybe cook them and give them away??? shelter ?
