Homemade TERIYAKI SAUCE

I am a big fan of Teriyaki sauce, but it is not easy to find a good one. Here in Berlin they are mostly too sweet and with dubious ingredients. I found a japanese version, but only online and quite expensive, 20-25€ for a very little bottle.

So, I thought the best is to make a homemade version based on a recipe from the famous australian-asian cook Adam Liaw, who makes quite watchable youtube-cooking-videos and published also several cook books.

Ingredients

250ml (8 oz) soy sauce
200ml (6 oz) mirin
200ml (6 oz) sake
70g white sugar

Preparation

  1. Combine the ingredients in a small saucepan and cook on low heat. Stir for a few minutes until the sugar dissolves. Don’t boil it!

  1. Let it cool down and transfer the sauce to a bottle. According to Adam Liaw it will last several months.

The recipe I use uses some white onion and a bit of ginger juice as well.

I also add a bit of toasted sesame oil and a bit of grated ginger to mine.

To add roasted sesame oil is quite a good idea. :+1:
