Homemade Cider Fermenting

Freshly juiced from my apple tree (4 hour process with my crappy juicer that involved cutting up the apples). I added some Champagne yeast and it is going berserker after just two days!!! I am going to rack and rack again until it is crystal clear. I am hoping to have some nice cider by Christmas. I have made a lot of beer and wine in the past, but this is my first cider. I look forward to your comments / input.

Jorge, I have already Racked the cider to give it some room to breath.

Are you fermenting it dry? I’ve considered making cider in the past but not sure I want it to be dry. From everything I read it seemed like a serious PITA to leave some residual sugar.

I plan to ferment it dry, but add a little apple juice to the bottles before capping. First cider for me as-well, so we will see how it goes!

I’m glad your mom is letting you do this in the kitchen, I’m sure it would get messy if you tried to do it in the basement!

I wonder if I could make quince cider

I know nothing about making cider, but is using Champagne yeast vs. a type of brewing yeast going to change the palate outcome?

Re yeasts, apples are a high acid FRUIT whereas beer is made from GRAIN with almost no acidity. Good call I think.

I don’t know anything about making cider either. The dude at the home-brew shop said I should use Champagne yeast, so I did. It is still bubbling away.

Champagne yeast is the right call.

Bubbles are slowing now… soon it will be stashed in the cellar until around Christmas when I bottle. First to PM with an address will receive a bottle of my hooch!!! Fine Print - (may cause blindness/ illness, and or death).

Cider was/is crystal clear I just bottled yesterday, so two weeks of carbonation in the bottle and it will be good to go. Tasted yesterday while bottling straight from the carboy, the Cider is dry and delicious, I really think if carbonation goes well it will have been well worth my time.
