Tonight’s dinner was Shepherd’s Lamb in Rao’s Eggplant Sauce, seasoned with granulated garlic and oregano. Shepherd’s Lamb Sausage was browned and pan-grilled to medium rare. Then the sausage was sliced and added to the sauce. The sauce was served over fusilli and served with a nice 1999 Ridge ‘Icon’ (73% Syrah, 16% Grenache; & 11% Mourvedre) - cork colored a mere 1/4 inch, bright ruby-garnet in color; good red and black fruit, with adeqaute acidity, and no tannins; with a nice medium-long red-black fruit finish.
Then for dessert we had Banfi Grappa di Montalcino and Badia á Coltibuono wood-aged Grappa di Sangiovese with a shared half a Cripp’s Pink Apple. It was a nice finish to a good light meal.
