Joking aside, here’s what we’ve got going on… Dad’s always got an eye out for the next best thing, so a while back he brought in some Wagyu filets from a supplier we work with occasionally, just to try something a little different. We cut them up, fired up the grill, and… they were everything you’d expect out of a filet. But we found ourselves thinking they really weren’t head and shoulders above our Prime Holstein.
Something that I think confuses a fair amount of consumers - Wagyu is a breed, not a quality grade. It’s not like Prime or Choice, where there’s a standardized system ensuring a certain level of quality. “Wagyu” simply refers to the breed, and here in the US, most Wagyu cattle have actually been crossbred with another breed - Wagyu/Angus, Wagyu/Hereford, Wagyu/Holstein, you name it, there are tons of different mixes out there. Within that category, you can have Wagyu that’s absolutely mind-blowing, and you can have Wagyu that’s… fine. Just fine. Though credit where credit’s due - you can’t really blame “Big Wagyu” for running one of the more phenomenal marketing campaigns in the beef world.
So we got to thinking - is this actually better than our Prime Holstein? And the answer, in our completely biased and possibly heretical opinion, is no. We think what we cut side by side was on par with our own Prime Holstein filet, but wearing a “Wagyu” name tag that lets it command a much higher price.
So here’s what we’re doing about it:
We’re offering a Filet Mignon Flight - half Wagyu, half Prime Holstein. That’ll let you cook them up side by side and decide for yourself which you prefer.
