Economics-wise, we live in the ‘steak on sale’ but not the primal fiscal level.
I went for the 109. I look forward to discussing the aging time and the cuts … thinking a few big rib-in, the rest of the ribs for smoking with some boneless steaks… mouth watering already. Fun and glad I found this.

Any special techniques to keeping in freezer for longer term?
Good vacuum seal. I cooked my last ribeye from last BD last week with no loss of quality that I could tell, still in the top 5% steaks I’ve ever had. And that was just thrown in a normal freezer in the vacuum sealed bag you’ll receive them in. Someone reported cooking a 5 year old steak. They keep “forever” if they are properly sealed.
