What happens to the extra cap/lifter meat layer on the 107? Do you leave it as part of the steaks or would that be up to us?
Started off with 6 each of the 14oz ribeyes and NY strips. Then had to go back because I could not pass up the custom 109 rib. I love dry age steaks and have been sad the “old ones” on Flannery have been sold out for a bit. Definitely want to do something like 45 days for the primal.

it’s entirely your call! we could cut a few ribsteaks off the chuck end of the 107 that visually would be like nothing you’ve ever seen / cooked before… would look like a dinosaur steak. There’s a good amount of extra fat though, so if your goal is maximum yield, go for the 109. If you want something totally different that will absolutely be a conversation starter, the 107 is epic.
Ss the primal moves from chuck end to loin end; the lifter meat disapears, so essentially, the chuck half of the 107 is quite different from the 109, and the loin half is going to be damn near the same between the two.

By the way if anyone wonders how long these keep in the freezer. I ate one ribeye from last years BD a week ago and it was still one of the greatest steaks out there. So they last easily a year.
