So, now that I got my first shipment (which looks beautiful!!), I have a few questions…
–How long will the steaks and ground beef keep in the fridge as long as the sealed plastic is not opened?
–Is it better to freeze immediately what I don’t think I will eat in the near term or can I wait to see what we end up eating this coming weekend (may end up having a bunch of people over but may not)?
–How long do the steaks and ground beef keep frozen? Is it better to defrost them in the fridge overnight or out on the counter?
There has been some helpful discussion of how to cook the steaks, but any thoughts as to how to best cook the burgers, particularly when there is a higher percentage of fat (with the caveat that I cannot cook them in a pan on the stove and prefer to cook them on the grill outside either on the grates or a griddle type overlay)?
I ordered my first two steaks this year. I had them delay the shipping to recently. Did the first one in the Big Green Egg BBQ with mesquite charcoal. Easily the best NY strip steak I have ever had. Next year or maybe this year, I am in for more. Also, I found, not only do they keep for weeks in the fridge in their sealed bags, but they soften and probably improve. No discoloration of the meat this whole time - 6 weeks now. Incredibly good.
Bumping because Flannery has three 30% off sets of CA Reserve for Memorial Day. The second (two Jorge Ribsteaks, four 12oz California Reserve New York Strips, and four 12oz California Reserve Ribeye Steaks for 10 steaks total), is tempting to me in large part because the Jorge’s are included, but I still have several steaks from past sales that I have yet to devour.
