Favorite uses/recipes for sourdough?

I’m working on a new batch of sourdough starter, so I thought I would ask if folks have a favorite use or recipe for their sourdough starters…

I know I was being a smart ass, but you really can’t get the same starter any where else.

Apparently there’s a strain of yeast indigenous to SF (must hold off on bad jokes here). While you can buy SF sourdough starter, I first wanted to make my own to see what I can make without buying someone’s commercial sourdough starter. Down the road I can experiment with bought starter.

We make sourdough pancakes with the starter when adding and feeding makes the culture too big. Let us know how the native starter project goes Bruce!!

Onion rings (a Nancy Silverton recipe):
Cut an onion into rings of a size suitable for frying. Thin out some starter with a little club soda. Dust rings with flour, dip in starter mixture, & deep fry at 375 until golden. Sprinkle with salt & enjoy.

Sourdough rolls (note: they call these biscuits, but the only thing biscuit-like about them is the shape; great tasting rolls though; and they are really good the next day when sliced in half and toasted).

Made sourdough boules the other day. Nice, but needed more of a sourdough tang.
