Lemonade
Vinaigrette with olive oil, Dijon mustard, shallots and fresh herbs (your choice).
If you have a lot, you may not use them all up before they go bad. I’d consider making preserved lemons with some of them – easy and yummy.

Meyer lemon ice cream is killer.
We had an incredibly prolific tree in our backyard in SF.
One of the things my wife has missed the most up here.
I often make a pasta with meyer lemon, ripe avocado, cilantro or mint, peppers, and some sort of shellfish (either shrimp or scallops).

We got our first crop of Meyer lemons this winter from a dwarf tree and explored recipes.
We found Lemon Pudding Cakes by Cooks’ Illustrated was a great dessert that focused on clean, simple, lemon flavor. Relatively simple too. Taste test as you add the sugar so you don’t overdo it. Meyers are not as tart are regular lemons and you don’t want to dull that sharp, beautiful, lemony character.
EVERYTHING is better with Meyer lemons!
I make a quick version of preserved lemons that we add to all kinds of stuff:
slice lemons thinly & lay them on parchment covered baking sheet. sprinkle with salt, sugar, 1/2 t. fresh thyme, 1/4 t. red pepper flakes & drizzle with olive oil. cover with plastic wrap & keep in refrigerator for 3 days. Put them in a sealed container & they’ll keep for several weeks. We add them to pastas, chicken, pork… anything that you think a hit of savory acid would improve.
Tall glass filled with clear ice
3 oz London Dry Gin of your choice
5-6 oz Q Tonic
6 drops Bittermens Hopped Grapefruit Bitters
1/2 Meyer lemon juice and peel
I think I’ll make one when I go home after work. Our Meyer trees are heavy with fruit.
