The 05 Pax’s need some time to really open up. I have been able to get away with pop and pour for the 04’s but I would give it a good hour before serving. After that watch it evolve in the glass.

I assume this is similar…but I had the 06 Pax Syrah Alder Springs “The Terraces” - on Sunday - opened up around noon, went into a decanter at 5, consumed around 8-10pm…I would expect no less out of your 05.

Preface this by saying I’ve not had great success with the 10 or so bottles of Pax I’ve been around the past year. I posted a note on this '05 back in June. I decanted two hours and was still not thrilled.
Do what Bowden said. Give it a bunch of open time.
Well, thats what Landreth did on Sunday when I was there…I didnt even taste it until about 8ish.
My experience is that young(er) Pax need several hours of decant time to show well. Most, if not all, of my pop and pours have been monolithic and one dimensional.
I just had this wine last week. It doesn’t need hours, it needs days. I had it opened for 4 days (wasn’t gassing the bottle but did keep a cork in it in our 80 degree house) and it hardly budged.
I’d like to know how you guys figure out your decant times (not being sarcastic). I sometimes just pour through a vinturi into a decanter, beat the wine up a little and then pour and glass and see how it goes. I typically don’t have the time to let wine air out like you guys are suggesting. Is my method the best option available to me based on my time frame?
I just decanted it now…could smell the dark fruit wafting up while I was pouring it in. Couple minutes later, stuck my nose in the decanter - nada. Methinks there will be several double decanting breaks at the office today. ![]()
