On Iron Chef tonight Bobby Flay made a cranberry with sliced pear compote which included cabernet. A judge described it as the transcendent dish of the night.
I’d love to try to make something like this. Problem is I only came in while they judges were tasting and I did not see they cooking portion of the show.
Do any of you have some ideas on how to make this, or did you see any of how Flay made it?

Maybe I can just add sliced pears to this and cook, or maybe first poach or parcook the pears in the wine, sugar , wine and spices, then add to cranberries to finish the cooking.
