Crab in Arribiata Sauce on Garganelli with Rosso di Montalcino

We didn’t go to Maria’s for lunch because of weather and road conditions. So tonight’s dinner was some more of the latest crab from TJ’s, heated with Meyer Lemon Olive Oil, granulated onion, and a little granulated garlic. When the crab was warmed, the last half of the Rao’s Arribiata Sauce was added along with more granulated onion, chervil, and basil. It was quite enjoyable with a 2003 Poggio Salvi di Montalcino, a Rosso di Montalcino from Biondi-Santi - fill under the capsule; cork lightly colored about a cm up; color a dark ruby; rich, ripe nose & flavors of spicy red & black fruit; mid-palate with barely adequate acidity and lots of ripe fruit; with a medium long ripe fruit finish. It was a very enjoyable Winter meal, listening to Bach’s Sonatas for Keyboard and Viola da Gamba.
