Costco Superior Farms Lamb Sirloin - Sous Vide ready

Been buying the Superior Farms Lamb Sirloin roasts from Costco that come vacuum sealed 2 per package and cooking them in my Sous Vide setup for 2 hours at 127.5 F. Throw them briefly on the grill for 30 secs on all sides and slicing them thinly. They’re nicely seasoned with a sprig of Rosemary placed on top of each roast. Highly recommended if you’re looking for an easy sous vide meat entree as the center of your dinner. No prep at all, right out of the frig into the bath or maybe let it sit on the counter for a bit to warm if you want it sooner than 2 hours. Take a look:

I’ve never seen these at my local Costcos (in NYC) are the fresh or frozen?

They’re fresh. I’m in N. California and they come and go locally in our Costcos. They’re labeled as Superior Farms American Lamb http://www.superiorfarms.com/ and come from ranches around the midwest and Pacific Coast according to their website. I’ve got a friend in CO who says there are a lot Superior Farms lamb raised there. Locally there is a ranch in Dixon, CA that supplies many of our local supermarkets and the products are quite good, from chops, racks, and legs. Never seen whole sirloins before until they showed up at a Costco in Vacaville, and now closer in Woodland, CA. I asked the butcher in my supermarket about them and they buy whole sirloins to cut into chops but he would sell me a whole one if I wanted. I did that and it was good too, but of course I had to season it and seal it for sous vide myself. Quite reasonable as they’re only $13-$15 for the pack of 2 at Costco and it’ll feed 4 easily.
