I like to pair the wine with a glass that’s way too small for the aggressive swirling I’m doing, while people edge their seats away from me looking nervously down at their nice linen.
Just wanted to add that Alex runs a great Guanciale class. Highly recommend the class and the wines

Silas wines are the best! We went with #7 because there is no such thing as “too much” of this wine. We have been buying it for quite a few years and nothing compares.
