Christmas eve called for a blind tasting of 2008 Champagnes, Dom and Vilmart CdC. Most at the table identified the Vilmart and Dom; similar light golden color, with the Vilmart lemony focused nose and the Dom’s brioche yestiness. The Vilmart had more spine and intensity while the Dom had more creaminess and body. Both went down too quickly so there wasn’t more than an hour for them to develop. It will be interesting to see how these mature over the years, although since I like Champagne on the younger side they won’t be around for too long.
And as a nightcap I opened a 1970 Fonseca; decanted for six hours it still had a bit of heat and alcohol to it but over a couple hours in the glass it seemed to come together a bit more. Raisins and chocolate, this may not have been my best bottle of a case purchased in the early 80’s.
